Japanese Master Chef Heiji Kasuga debuts at ENJU

I was at Prince Hotel last week when I found out that there’s a new Master Chef in town. Japanese Master Chef Heiji Kasuga brings with him 46 years of experience in cooking Japanese cuisines, both traditional and fusion. Along his cooking journey from an Assistant Cook to a Master Chef, Chef Kasuga is also capable of cooking Western Japanese and Chinese Japanese dishes. His work of art are now available at ENJU Japanese restaurant in Prince Hotel.

The first dish that we had was the Sashimi Fuji, which was a plate of 20 pieces of sashimi at the freshest condition. There were salmon, tuna, butter fish, squid, octopus and yellow tail just to name a few.

I particularly loved the salmon which cut perfectly and oh-so-fresh! Each piece was firm and each trace was clear.

Murugai Yaki was the grilled mussel with Enju dressing which was cheesy and creamy. This was definitely a dish with an unexpected taste to me as I always experienced fishy smell with mussels. So when I was eating these, I particularly paid attention to whether the fishy smell was there and NO, it wasn’t. Not at all. Very impressive! What’s more, the dressing of cheese went so well with the mussel that one piece was not enough.

The Assorted Makimono was nothing to boast about, except that each roll was nicely, firmly and neatly wrapped  with no loose right. Plus, fresh seaweed was used, resulting in a slightly crunchy and chewy feeling.

Maguro Yamakake or grilled red tuna was awesome. It was an unassuming drop of heaven on a spoon that melted in my mouth and bursting with flavour.

The melt-in-your-mouth sensation was so addictive that I had 2 servings of this, savouring every second of it while it lasted. Definitely recommended!

The ENJU Dynamite Roll was made from fresh salmon, cucumber, flying fish roe, tempura flakes, avocado and sushi rice wrapped in dry seaweed. If you look carefully, the amount of rice used was really minimal, which is good for people on low-carb diet! In fact, I loved it too because I never fancy too much rice in my diet. *LOL*

Deep-fried soft shell crab drizzled with teriyaki sauce attacked our nose buds first even before we ate them. It was very aromatic and fried until golden brown. Though I found it a tad oily, it was crispy and flavourful. The portion was huge too, enough to be shared with 2 or 3 persons.

At the end of the meal, I had the chance to take a picture with the noted Master Chef Heiji Kasuga, who was such an adorable guy. He kept telling us to email him the pictures we took together after that.
