Jamie Oliver’s Roast Chicken
It’s the weekend again! What’s for lunch? Fancy a roasted chicken?
My friend Ann first told me about Jamie Oliver’s famed roast chicken a few weeks ago, when I asked her what should I cook at home. After taking a look at it and checking what’s in the refrigerator, I decided to so a little bit of modifications since I don’t have all the ingredients required. Some of the ideas here were also given by Ann, and I thank her for that. For it turned out to be awesome! This is my improvised version of Jamie Oliver’s Roast Chicken:
Ingredients:
- 1/2 Chicken (Preferably Nutriplus chicken from Jusco)
- Salt
- Pepper
Part A
- A tablespoon of butter
- 1/2 cube of chicken stock
- Thyme
- 2 tablespoons of Olive oil
Part B
- A whole lemon
- Garlic
- Tomatoes
My recipe is catered for 1/2 chicken since I only cook for 2. But I’m sure you can modify the ingredients for a full chicken accordingly.
I strongly recommend Jusco’s Nutriplus chicken because it gave the best results! This was my 4th time trying the recipe and I experimented with various chickens from the supermarket, from the market and Nutriplus. Even Saucer agreed that the Nutriplus chicken was the best.
Firstly, rub the chicken with a generous amount of salt and pepper all over. Then, mix ingredients in Part A into a bowl. Stir them well, resulting in a thick, creamy mixture. Then, apply the mixture all over the chicken. Make sure you don’t miss the area underneath the skin too. Try to separate the skin from the chicken meat and apply the mixture in between carefully (don’t break the skin) and apply the rest all over the chicken. Cover it in the plastic wrap and place it in the fridge for a few hours. If you do it in the morning, then you can leave it until it’s lunch or dinner time.
This is my chicken after I left it for about 6 hours. Those are thyme leaves on top.

Next, heat up a pot of water, and place the lemon and garlic cloves inside. Cook it for 12 minutes. Jamie recommended potatoes as well, but since I didn’t have any, I skipped those.

Boil for 12 minutes
Remove the lemon from the water, and carefully stab at least 10 holes into it using a fork.

Now here comes the trick! This is what makes the chicken moist and tender at the end, trust me. It works! Place the poked lemon underneath the chicken within the cavity. If you’re using a full chicken, just push it into the cavity. Refer to my picture below for a better understanding.

Then cut some tomatoes and place them on the side of the pan. Place the garlic cloves all over the pan and on the chicken as well. And you’re ready to roast!

Set the oven to 190C for 45 minutes. Place the chicken inside, and just sit back and relax.

After 45 minutes, check your chicken by poking it through using a fork or any sharp object. If you see transparent juice flowing out (as opposed to blood), then the chicken is fully cooked! If it’s not fully cooked, increase the timer for another 15 minutes or so. Then, carefully remove it from the oven.

Tadaa! My chicken was done! What do you think? Even looking at the picture now makes me salivate. *LOL* The chicken meat was moist and tender, thanks to the lemon. Also, the marinade gave it so much flavour! Amazing! If you like chicken, you should try cooking this at home. You might love it like I do.

I’ve invited the family to ours this xmas for a traditional dinner, so the roast is pretty important! I found an archive of ideas at this roast recipes site, but cant seem to decide on anyone – there’s too many to choose from! It’s fun planning such a big xmas meal though!
