We had the privilege of meeting the man behind the scenes, Master Chef Ricky Thein who created an extensive Chinese New Year Set menu for your dining pleasure.

The braised shark’s fin with fish maw was extremely generous with shark’s fin! There was a huge piece of shark’s fin hidden beneath the thick broth, in addition to the fish maw and juicy mushroom.

For a prosperous new year ahead, one must not miss the ‘fatt choy’ since it signifies prosperity and money in the Chinese custom. Needless to say, Tai Zi Heen perfected this dish with the addition of dried oysters, sea cucumber and some vegetables.

The star of the night, might I say, was the super thick, huge and delicious cod fish! The fish was also extremely fresh, with smooth and flaky flesh that practically melted in my mouth. Also, the supreme soy sauce was unlike any other soy sauce that you can find from the supermarket, it really brought out the best of the fish.

My second favourite dish was the deep-fried prawns, which was served in a very generous portion. Each person on the table of 10 could have at least 2 pieces of this savoury prawn. The very strong aroma was already enough to keep our senses perked. Eating it eventually brought out a sense of explosion in the mouth since each piece was bursting with flavour!

Fantabulous prawns

After the seafood, came the poultry. Instead of the typical chicken, Tai Zi Heen presented us with duck. The braised duck was done just right without the meat being too gamey. Simple yet elegant.

Moving towards the end of the meal, we were served with fried rice. The special fried rice here even had mini abalones on top! So cute! The rice was very fragrant and fried with enough heat. Each morsel of rice was in perfect shape with no clumping altogether.

Last but not least, the dessert was a health concoction of hasma, red dates and glutinous rice dumplings, or ‘tong yuen’. The ‘tong yuen’ is a famous Chinese dessert during Chinese New Year as it represents the whole family bonding together, just like the balls of flour, as tight as it could be. :)

The meal was definitely above satisfactory, with the star going to the cod fish. It was simply the best, I kid you not. To have a taste of this special Chinese New Year menu, do head on to Prince this Chinese New Year.
